Menu Plan Monday - May 2, 2011
Life is beginning to revert back a routine this week, and I hit some great meat markdowns at the grocery store this week, so I'm looking forward to doing a bit more scratch cooking than I have been lately. The weather for the week is forecasted to be both hot - in the upper 80s - and then much cooler other days - not quite 70 - so I'm planning to do a bit of grilling and some soup making. I love cooking to the forecast!
Breakfasts:
Scrambled eggs and bananas
Ham, cheese, and broccoli omelets
Yogurt and fresh strawberry parfaits
Pumpkin chocolate chip muffins - I'm going to try to modify this recipe to make it a bit healthier, but it sure sounds yummy!
Cereal and bananas
Pancakes
Leftovers
As usual, lunch will be leftovers from dinner, sandwiches, sliced veggies, and fruit.
Suppers:
Monday - California trio casserole
Tuesday - Grilled pizza, sliced cucumbers, watermelon
Wednesday - Steak stir fry, brown rice, Asian veggies
Thursday - Vegetable beef soup, homemade bread
Friday - Grilled chicken, black beans and rice, corn
Saturday - Lunch out for Mother's Day, snacking at a family party/baseball game
Sunday - Whatever my family decides to cook! :-D
I want to try making my own granola this week, too. Does anybody have a good recipe??

I love pumpkin chocolate chip muffins! I make them all year long, even though everyone thinks I'm crazy.
ReplyDeleteI use my own recipe, which is similar to this one, although a good bit healthier. It features whole wheat flour, melted butter instead of oil, lots of spices, and toasted walnuts for extra nutrition!
