Menu Plan Monday - April 14, 2014

Happy Holy Week!  We're going to be exploring that theme in lots of different ways this week, in our school time, our art, and even in our snacks.  :-)   The weather has been forecasted to be beautiful for half of the week and a bit chillier the other half, so we'll be outside when we can and being creative inside when we can't.  That may dictate our menu plans a bit.  

Here are a few general ideas:

Breakfast:


 
- scrambled eggs, juice, bananas

-Apple muffins and oranges

Dinner:


 

- Pizzadillas with Easy Bolognese Sauce, Pepperjack cheese, & onions; salad
 
 
- Grilled steak fajitas with peppers, onions, salsa, and rice
 
- Easter dinner:  baked ham, Guilty Good Green Beans, Mom's Baked Corn, S'Mashed Italian Potatoes, Resurrection rolls, applesauce, and Resurrection cake for dessert.
 
- Leftovers
 
 
We're going to bake a Resurrection Cake on Saturday to have for dessert on Sunday.  In the past we've made this Bunny Cake.

Menu Plan Monday - March 31, 2014

For the past two weeks, we've had very few scheduled events away from home - but all of that's about to change.  For the next few weeks, we're back in the saddle schedule-wise and keeping ourselves very, very busy with some great events.  Our menu this week will be reflecting that.

Breakfast:

- Tacos, salad, chips 'n' salsa

A friend might be coming over to visit on Wednesday, so I think we'll bake some brownies then.  :-)  We'll be ready for some fun chocolate mid-week, anyway.

Menu Plan Monday - March 17, 2014

 We're scheduled to have a record week around here - with nothing on the schedule!  I'm excited to say that other than a child's birthday and youth group, we have nothing on the calendar.  Whoo-hoo!  I'm expecting to see lots of games, shorter school lists with fun interactive projects, and perhaps spontaneous dinner plans involving short people.  :-)

Here's a tentative plan, though, to prevent myriads of trips to the grocery store.

Breakfast: 




- Perfectly Pumpkin Waffles, fruit - birthday breakfast

- Cinnamon & Sugar Baked Doughnuts, fruit

- scrambled eggs, juice, bananas

Dinner:

- Fish & chips in newspaper with a side salad

- birthday request:  pizza, salad

- Chicken enchilada soup, tortilla chips & salsa, fruit
 
- Angel hair pasta with Easy Bolognese Sauce
 
Loaded cauliflower & chicken casserole with cous cous @ applesauce
 
- Taco bar - beans, beef, grilled onions & peppers, cheese, lettuce, tomato, salsa, Spanish rice

- Leftovers

 
We've got about half of a birthday cake left from this weekend's party and some ice cream, too.  We'll be feasting on that this weekend - and I'll share more about this crazy cake tomorrow.

Menu Plan Monday - March 10, 2014

Breakfast: 



- Perfectly Pumpkin Waffles, fruit

Dinner:

- Grilled turkey sausages with baked potatoes and steamed broccoli

- dinner out at a banquet with friends

- Cheese & broccoli quiche, fruit


Beef & Bean Burritos, chips & salsa

 
- Nacho bar - beans, chili, grilled onions & peppers, cheese, lettuce, tomato, salsa

- Leftovers

 
With birthday stuff galore happening this weekend, we'll probably have some kind of cookie happening for portable, quick desserts and then a 'landscape' cake for the big event.  For our happiness this week, we'll be dessert-ing on pumpkin cake.

Menu Plan Monday - March 3, 2014

Yesterday we spent the afternoon outside, reveling in the sunshine and temperatures near 70.  Today we're snuggled inside as a winter storm overtakes our area, threatening us with 1/2" of ice and snow on top of that.  I think we're moving back to fires, baking, and comfort foods!

Breakfast: 



- Caramel Pumpkin Doughnut Hole (Muffins), oranges

Wild rice soup & salad with Italian herb bread - it's happening TODAY!

- dinner out at a banquet with friends


- Breakfast for supper - Blueberry Biscuits, oranges, and scrambled eggs

With the weather as cold and yucky as it is, I'm definitely thinking that we need to bake something - I'm just not sure what yet!  Maybe chocolate chip oatmeal cookies ... they're always good.  :-)

Menu Plan Monday - February 24, 2014

Last week's craziness and traveling wore me out, but the break from major cooking was nice.  We're pretty busy again this week, but I'm hoping to fit in some simple and healthy meals - and I'm looking forward to being at home again!

Breakfast:

Dinner:

Wild rice soup & salad - we haven't succeeded in having this yet, but I'm determined to make it this week!

- Breakfast for supper - breakfast pizza, fruit

- Baked potato bar

- Leftovers


Our church youth group is having another bake sale fundraiser this weekend, so I'll be baking lots at the end of the week for that.  I'm planning to take a few loaves of wheat bread, lemon crinkle cookies, and maybe a Black Magic Cake with Cheesecake Filling and Chocolate Ganache (CCC), but I'm certainly open to suggestions!

Menu Plan Monday - February 17, 2014

We're having a different sort of week this week. We have three major out-of-town field trips, a party/meeting, and, hopefully, our youth group will meet.  I'm excited about the events but I've been sort of dreading the busyness of it all.  While I usually try to avoid scheduling things like this, it was out of my hands this time - so I'm trying hard to prepare for it the best I can and then to go with the flow.

Basically, I'm not planning to cook this week.  Like at all.  It's hard to cook from the mini-van!

I did some prep stuff on Saturday, though, and I've been putting things in the freezer as I had the chance, so here's my on-the-run plan for this week. 

Breakfast:

Chili, fruit

- Chick-Fil-A Kids' Night

- Pizza, carrots

- Barbecue sandwiches, salad

I'd love to say that we're going to bake something fun & decadent, but I'm pretty sure I'll be doing well to keep us in bread and to keep the dishes done, so we'll not push that.  If any baking happens before Saturday, it will just be a happy bonus.

Menu Plan Monday - February 10, 2014

I'm really not sure how to plan meals for this week.  We have a few big things going on and then there are rumors of a huge snowstorm coming our way.  They say we might get three whole inches!  Gasp!  

So here are my best guesses for the week, but ... it could always change.

Breakfast:

- Breakfast burritos, fruit

- scrambled eggs, juice, bananas

Dinner:

- Wild rice soup & salad

- Beef & Bean Burritos, salad, applesauce

- Chinese New Year Dinner - Sesame chicken, fried rice with vegetables, egg rolls, pork dumplings, Mongolian beef and broccoli, seaweed crackers, apples and oranges, sweet rice ball soup, cream cheese wontons

Pizza, carrot sticks, apples

- Leftovers
 
- Ham party sandwiches, salad, applesauce
 
I haven't decided on any menu plans for Valentine's Day yet.  Suggestions??

Our kids' youth group at church is having a bake sale this Saturday.  I'd love to hear your ideas.  I'm currently planning to take two loaves of bread, some lemon cookies, and perhaps a bar of some kind.
