Ready-in-a-Minute Hearty Breakfast Sandwich


Sometimes, there's just not a lot of time to make breakfast.  Others, you need something that will keep you satisfied and undistracted throughout a busy day.  Or, you might be like my husband and want your favorite biscuit flavors - only healthier, so you can eat one more often.

If you ever find yourself in any of those situations, this is the breakfast - or lunch or dinner - for you.

This sandwich takes literally a minute to cook, and if you have the ingredients on hand, you can assemble it in the same amount of time.  With crumbled sausage and cheddar cooked inside the eggs, this hearty sandwich is ready to be eaten on the go.

My husband was so excited to be handed one of these yesterday while working on the deck that he asked for another one today.

Maybe we'll make these for Father's Day Breakfast!

Ingredients:

  • 1 or 2 eggs (above sandwich made with 2)
  • 2 T. shredded cheddar cheese
  • 1 whole grain sandwich round
  • 1-2 T. cooked sausage, crumbled (I keep some of this in my freezer for just these sorts of dishes - also good in Guilty Good Green Beans)
Here's how to make your own Ready-in-a-Minute Hearty Breakfast Sandwich.
  1. Find a microwave-safe bowl that is the same size as your sandwich round.
  2. Spray the bowl with cooking spray.
  3. Crack your egg(s) into the bowl and whisk.  Adding a second egg will make your sandwich taller and bigger to appease a bigger appetite.
  4. Sprinkle the sausage and cheese over the top.
  5. Microwave until the egg is tall and fluffy.  One egg takes 1 minute in my microwave, and 2 eggs takes 1.5 minutes..  Microwaves vary, so be sure that the center of your omelet is firm and not runny.
  6. Slide the egg mixture out of the bowl and onto your sandwich round.
Wrap in a napkin or waxed paper if you plan to eat this on the run - if it lasts that long!

  1. I've never tried eggs in the microwave. A friend who sells Tupperware keeps telling me to try her omlet maker. How's the texture?

    1. I've been doing this since HS. It works really well - just scramble up the egg with a fork and nuke it 'til fluffy. I wouldn't use a plastic dish, personally, and I'd be sure to butter/spray it well, but it will rise really high and taste great. We love to put these eggs in biscuits, sandwich rounds, or even just bread, and I love that I can make the eggs fit the carb exactly without anything falling out.

      The eggs will end up with a texture almost like scrambled eggs - pretty fluffy, maybe not as extra moist, expecially if you use lots of milk or butter in yours, but I think it's a great option for the days when you don't want to mess with a frying pan!

    2. What a good idea to actually microwave them all together. I make these sandwiches for myself a lot, but never put all three ingredients together, just piled them on the bun individually. I have a roll of pork sausage in the fridge, I'll need to fry some up and crumble it so I am ready to make these one day this coming week. I don't know how we ended up with so much breadstuffs in the house, but I have got to start eating it up, or it will go south.

      Hope your Fathers Day was good! We met my dad for breakfast this morning at a nearby Cracker Barrel, and tonight we will take my husband out for dinner at a Middle Eastern restaurant near our house. Hope it is not too crowded!

    3. This was the first time I've ever added anything besides cheese, and I loved how it came out! (Well, it went over so well that I've done it a few times now.) I've thought about making these ahead and freezing them, but they're so quick to make that I just make'em when we want them.

      Our Father's Day was great! We went out for lunch and then spent the afternoon at a family fun park that we had free passes to. We did go-karts, batting cages, mini golf, and roller skating. It was fun!

  2. Tried this this morning. Bad news to report - when I opened up the ground pork sausage log I had in the fridge, it went straight to the trash. P U ! as my mom used to say. Good news - making this with just egg and cheese works great. You better believe this is going to get made here again. Next time I think I will add some ground pepper to the scrambled egg mixture and put more cheese on top ( I probably only used about 2 teaspoons this time.) thanks!

    1. Ugh, I hate when that happens! I think you can probably add about anything to this as long as the meat is in small pieces (and is precooked) and you give the egg enough time to get fluffy. I'm going to play with some other combinations now. Your pepper and cheese sounds great!
