Menu Plan Monday - April 15, 2013

We're heading into the home stretch of our school year, and right now our life reflects it. With some sickness last week and the baseball craziness picking up, we're staying pretty busy.  It's the good busyness of spring, though, and we're fitting in lots of outside time.

We're keeping things simple in the kitchen once again.  Last week we saw temperatures soar to near 90 most days, so we're moving into a summer-style plan that won't heat up the house but will be healthy and filling.

Here's our plan:

- Scrambled eggs, canteloupe, and toast
- Pancakes and fruit

Peanut Butter Chocolate Chip Baked Oatmeal
Whole Wheat Cinnamon Rolls, fruit


Betsy's Baked Mac 'n' Cheese, salad, Healthy Molten Lava Brownies

- Rotini with Easy Bolognese Sauce, salad
- Sliced ham, Mom's Baked Corn, rolls, and baked (sweet) potatoes
- Family Movie night/snack supper to celebrate the completion of Swiss Family Robinson by our Big Helper  :-)
- Leftovers
- Campfire cookout with roasted hot dogs, fresh fruit, and birthday cake
- Grilled Chicken with veggies and salad
