Menu Plan Monday - September 10, 2012

It seems lately as if our weeks have themes, and this week it's going to be all about being busy.  My Little Man plays in his first two baseball games, and we have something happening in the afternoon every other day this week.  Translation:  We're eating from the Crock Pot or the freezer this week!

Here's the plan:

Breakfast:
- Pumpkin waffles (left over from dinner)


- Hearty Breakfast casserole, fruit
- Doughnut holes - I'm going to play with this recipe

Lunches will be sandwiches packed picnic-style or leftovers from the night before.

Dinner:
- Pumpkin waffles, made wayyyy early to be ready before game time, and turkey sausage
- Caribbean Jerk Chicken over rice, made in the Crock Pot
- Dinner out after a field trip


- Pizza casserole (From the freezer), green beans
- Nacho bar
- Family Race Day - our first Mud Run!  The plans will depend on the amount of mud left on us after the run....
- Leftovers


We're also going to try to do a bit of baking since the weather is cooling off here.  It would be great to make a few fun things on hand for our travels this week, so I think we'll shoot for Peanut Butter Chocolate Granola Bars and some oatmeal cookies.

  1. It's time for me to pack the freezer! The rest of September and all of October have the "busy" theme at our house. I definitely want to try your breakfast casserole.

    1. I'm hoping to spend an afternoon here and there making doubles of things to stick in the freezer for those days when there is just NO time. If you have any freezer tips, I'd love to hear them! Hope you like the casserole. :-)
